Split Emmer Farro
Bluebird Grain Farms
Crafted By: Brooke + Sam Lucy
Methow Valley, Washington
This ancient style of bulgur is literally split in half from Bluebird Grain Farms' whole grain emmer. Traditionally known as Farro Spezzato in Italy it cooks in 1/3 the time (20 minutes) and yields a light, airy cooked grain with tremendous flavor and soft texture.
Cook and use in a refreshing summer salad with feta, watermelon, olives, and herbs; add to soups for a boost of hearty texture; sauté with olive oil, fresh shallots and capers to compliment a main dish such as skirt steak; or replace white rice for a health-minded option.
About Bluebird Grain Farms
Being a plow-to-package grain farm means that Bluebird Grain Farms does everything, working with nature every step of the way. The goal is to cultivate and mill the most irresistible, nutrient-rich grain they can, while leaving this land healthier for the next generation. For the Lucy family and their staff, great taste, real nutrition and a thriving countryside go hand-in-hand - you simply don't get one without the other. The grains are grown in the Upper Methow Valley and irrigated with pure mountain water straight from the Pasayten Wilderness. The grains are conditioned in custom-built, old-world wooden granaries and milled to order ensuring you the freshest product available.
