Arctic Char Crudo | Rose Sea Salt | Blood Orange | Celery

2 Tablespoons, Outer Banks Sea Salt

1-2 Fresh Rose Petals

2 Ounces, Arctic Char Flilet

1 Blood Orange, Cut Into Supremes

Olive Oil

Celery Leaves



1. Using a mortar and pestle, grind the sea salt and the rose petals together until the mixture becomes a bright purple color. Set aside.

2. Using a very sharp knife, thinly slice the arctic char and plate on a chilled serving dish.

3. Garnish the fish with the rose salt, blood orange supremes, olive oil and celery leaves. Serve immediately.
