While exploring Nashville on our latest Culinary Adventure, we took advantage of the opportunity to dine at Rising Star Chef Philip Krajeck's Rolf and Daughtersnamed one of Bon Apetíte's Best New Restaurant's in America (2013). Equal parts rustic and refined, the authentic Italian cuisine goes beyond spaghetti and meatballs.  Rolf and Daughters proves that Nashville's food scene stands up with the best epicurean cities in America.

Cynar - a bitter, artichoke based liquor - is a personal favorite of our's here at The FareTrade.  Perfect for the cold winter months, Rolf and Daughters pairs it with bourbon, angostura (you know, just to add a little more bitterness) and a little bit of orange to add sweetness + take the edge off.

Oh Chicken Liver, how we love you so.  Rolf and Daughters version is silky smooth, rich, and perfectly accompanied by a sweet + savory currant mustarda.  A perfect beginning.

Rolf and Daughters did it.  They figured out how to make Beef Tartare better.  The solution is simple, in retrospect.  Use dry aged beef + toss in some castelvetrano olives, sunflower and barley.  This combination boasts one of the deepest flavor profiles we've tasted in a tartare.

The title of this dish does not do the plate justice.  This dish is not just served with lamb.  This dish is served with three equally delicious preparations of lamb.  A perfect lamb loin, a delicate + slightly spicy sausage and a crispy, fatty + succulent portion of lamb belly.

Choosing a pasta dish at Rolf and Daughters is a task in itself.  After much debate, we landed on their signature offering.  Handmade pasta cooked to a perfect al Dente, smothered in a rich pork ragout, all topped with cheese.  We made the right choice.

Rolf and Daughters take on a classic flan is not so classic at all.  Utilizing farmers cheese instead of a custard base, this flan has a fresh, almost palette cleansing quality that was a perfect ending to a perfect meal.
