Rick's Picks Phat Beets | Goat Cheese Cream
To balance the tart, fragrent notes of Rick's Picks Phat Beets, we whipped up some goat cheese + infused it with herbs to concoct a bright, refreshing and light late winter appetizer.
1/2 Cup, Rick's Picks Phat Beets
1/2 Cup whipping cream
2 Tablespoons milk
4 Ounces soft goat cheese
2 Tablespoons finely chopped herbs (We used thyme, chives + oregano)
1 Scallion, thinly sliced

Whisk the cream until to soft peaks. Set aside.
In a separate bowl, whisk together goat cheese and milk until goat cheese has softened. Mix in herbs. Gently fold in whipped cream.
Add a few spoon of mousse on a plate.
Top with Phat Beets + scallion slices.
