Sriracha Fried Chicken Wings

Sriracha Chicken Wings

As part of her collaboration for our May 2015 basket, Chef Sarah Schafer, crafted a mouthwatering take on chicken wings featuring a homemade sriracha sauce, blue cheese dressing + Three Little Figs French Onion Confit!

Ingredients

For The Dressing


1/4 Cup, Cream Cheese
1 Cup, Buttermilk
8 Ounces, Crumbled Blue Cheese
2 Tablespoons, Three Little Figs French Onion Confit
Worcestershire Sauce, To Taste

For The Marinade + Wings

4 Pounds, Chicken Wings Sections
1/2 Pint, Buttermilk
1/4 Cup, Sriracha
2 Tablespoon, Kosher Salt
1 Tablespoon, Black Pepper
1 Teaspoon, Cayenne
1/4 Cup, Chopped Onion
2 Tablespoon, Minced Garlic

For The Wing Sauce

1/2 Stick, Salted Butter
2 Cloves, Garlic, Minced
1 Small Jalapeno, Minced
1/4 Cup, Crystal Hot Sauce
1/2 Tablespoon, Bee Local Honey Willamette Valley
1 Tablespoon, Sriracha Sauce
Kosher Salt, To Taste

Directions

For The Dressing


1. Add all ingredients to a blender and puree until smooth
2. Add more buttermilk if the dressing needs to be thinned out. Refrigerate until use

For The Wings


1. Combine all marinade ingredients together
2. Cover wings and let marinate overnight in refrigerator
3. Remove from fridge and deep fry at 350 degrees until golden and crispy, approximately 15 minutes

For The Wing Sauce

1. Melt butter in microwave
2. Whisk butter and remaining ingredients together in a large bowl

To Plate

1. Add cooked wings to wing sauce and toss together
2. Place on desired platter and garnish with side of dressing and celery leaves
