1 Medium/Large Butternut Squash; Peeled, Seeded + Cut Into Medium Pieces
1 Delicata Squash, Cut Into Rings, Seeds Removed
1 Tablespoon, Bee Local Oregon Buckwheat Honey
1 Green Onion, Finely Cut On The Bias
3/4 Cup, Baby Arugula
2 Tablespoons, Toasted Pistachio, Roughly Chopped
3 Tablespoons, Feta Cheese, Crumbled
Olive Oil, As Needed

Sea Salt, As Needed
1. Toss the prepared squash with olive oil and salt. Place on a foil lined baking tray and roast at 375 degrees until softened and caramelized. Let cool slightly.
