Roasted Winter Squash | Toasted Pistachio | Feta | Dukkah

Combining Butternut and Delicata squash, Chef Matthew Accarrino teaches you how to make a dish perfect to share with loved ones for winter. Savory and comforting, Clif Family's Toasted Sesame and Pistachio Dukkah brings this dish to the next level.

Ingredients

1 Medium/Large Butternut Squash; Peeled, Seeded + Cut Into Medium Pieces

1 Delicata Squash, Cut Into Rings, Seeds Removed

1 Tablespoon, Bee Local Oregon Buckwheat Honey

1 Green Onion, Finely Cut On The Bias

3/4 Cup, Baby Arugula

2 Tablespoons, Toasted Pistachio, Roughly Chopped

3 Tablespoons, Feta Cheese, Crumbled

Olive Oil, As Needed

Clif Family Kitchen Toasted Sesame & Pistachio Dukkah, As Needed

Sea Salt, As Needed

 

Directoins

1. Toss the prepared squash with olive oil and salt. Place on a foil lined baking tray and roast at 375 degrees until softened and caramelized. Let cool slightly.

2. Transfer to a serving platter. Drizzle with honey, top with green onion, arugula, pistachio, feta and finish with a generous sprinkle of the Clif Family Kitchen Toasted Sesame & Pistachio Dukkah spice
