Chicken Salad Tartine + Sunchoke Relish
The Fourth of July is almost upon us! Time to celebrate our independence with some good ole' American cooking. This chicken salad tartine is a simple-to-create crowd pleaser. Whip up a batch for your fireworks-infused celebration + make Uncle Sam proud.
Roast Chicken Salad with Jerusalem Artichoke Relish
2 Roast Chicken Breasts, shredded
- Grab a rotisserie chicken from your favorite market or utilize Thomas Keller's Favorite Roast Chicken recipe
2 Celery Stalks, sliced 1/8" thick
- reserve leaves to use as garnish
1 Shallot, finely diced
3 Tablespoons Mayonnaise
3 Tablespoons Charleston's Favorites Jerusalem Artichoke Relish
4 Slices, Bread
- We recommend a fresh Country Loaf
Freshly Ground Black Pepper
Salt, to taste
In a medium-sized mixing bowl, combine shredded chicken, sliced celery, diced shallot, mayo + relish. Mix until well combined.
Season with salt + pepper.
Toast bread slices.
Spread chicken mixture on bread.
Top with celery leaves.
It doesn't get much simpler than that.
